Açaí Nice Cream Banana Split Recipe

We all need a sundae or banana split every now and then.Lately I’ve been craving one every single day, but I want to be ableto enjoy it without worrying about how much extra sugar I’m eating. Not only that, but my kids LOVE food when it’s my food. Anyone else have that problem?

I decided to make a healthier version of a banana split. A banana split already has all the fruit and you can top it with whatever you’d like. So, why not make a healthy Açaí nice cream to fill it with?!

I made a simple nice cream with Sambazon Original Blend Superfruit Packs and frozen bananas for an extra creamy texture. I added some frozen blueberries for a gorgeous depth of color and even more antioxidants. Top it off with a little coconut water or non-dairy milk and blend away!

After it froze over I scooped the Açaí nice cream between a banana and let my kids go to town with the toppings. We added so much fruit and drizzled it with almond butter and agave. We also sprinkled on some crunchy granola!

The end result: a banana split for anytime of day. My kids loved it. I loved it. And the best part was I knew we were getting in our dose of nutrients while enjoying it. Make it with your family and kids. It’s a definite crowd pleaser!

Açaí Nice Cream Banana Split 

Prep Time: 10 minutes | Freeze Time: 1 hour | Ready In: 1 hour 10 minutes | Yield: 3 Banana Splits

Ingredients for the Açaí Nice Cream

2 Sambazon Original Blend Superfruit Packs

1/4 - 1/3 cup Coconut Water or Non-Dairy Milk

½ Cup Blueberries, frozen

2 Bananas, frozen and sliced

Agave

Ingredients for the Banana Split

3 Scoops Açaí Nice Cream

3 Bananas, sliced in half lengthwise

1 Cup Strawberries, sliced

½ Cup Blueberries

¾ Cup Granola

1/3 Cup Agave 

1/3 Cup Almond Butter

Instructions

1. Begin by making your Açaí nice cream. Blend your Sambazon Original Blend Superfruit Packs, coconut water or non-dairy milk, blueberries, bananas and agave until smooth.

2. Pour the Açaí nice cream blend into a loaf pan or glass Pyrex and freeze for an hour or two. 

3. When you’re ready to assemble the banana split, slice the banana in half lengthwise and plate. I like to scoop out the nice cream and then let my kids top it however they want.

4. Top it off! We topped it with agave, almond butter, strawberries, blueberries, and some granola. Enjoy!

This recipe is great to make with kids or friends. You can prepare the Açaí nice cream ahead of time (the longer it freezers the easier it is to scoop up) and set all the toppings up for everyone to make their own! Feel free to add more toppings you love!
